London cure smoked salmon from Goldstein, the family curers smoking in this city from 1911 and in the fish trade since the 1890s. The London cure is deliberately mild: a dry cure and a slow oak-dust smoke that lets the salmon taste of salmon. The 200g pack serves three to four as a starter with lemon and brown bread, or keeps a weekend of bagels honest.
