Crab melt

A crab melt is a cheese toastie that has been to the coast. It wants white meat, kept in large flakes, and just enough mustard and lime to stop the cheese flattening it. Twelve minutes from counter to plate.

This recipe comes from Seafood & Eat It, the Newlyn crab company whose hand-picked Cornish crab we stock on the deli counter. Their original is here. We have written ours for a counter, so you can use picked meat from a whole crab or one of their pots.

  2. Spread over the ciabatta slice and cover with the grated cheese of your choice.
