The head and frame take up much of the weight, so allow more per person than usual and keep the bones for stock.\u003c\/p\u003e\u003cp\u003eWe prepare it at the Barnes counter whole and cleaned, trimmed of its spines and fins, or filleted by hand.\u003c\/p\u003e\u003cp\u003ePan-fry fillets in butter for two minutes a side or roast a whole fish at 190C for 15 to 20 minutes.
